Perlite grades
Perlite is expanded volcanic glass that adds air space and drainage without adding weight. Particle size sets how fast the mix drains. #2 extra small suits seed starting and plugs, #3 small is the all purpose grade for potting mixes, #4 large suits coco and containers that are irrigated often, and #8 extra large is used for hydroponic and high drainage mixes.
Vermiculite grades
Vermiculite does the opposite job: it holds water and nutrients and releases them back to the roots. Fine grade is used for germination and for covering seed, medium for general potting mixes and coarse for larger containers and mushroom substrates.
